Golden Hubbard Squash

This is a great quick dish for a fall evening.

1. Pre-heat oven to 350
2. Slice Squash in half
3. Scoop out seeds
4. Place Squash skin side up [sliced side down] in a pan of about 1 inch of water
5. Cook for about 40 minutes
6. Remove from oven. Put 1 Tbsp of Butter, 1 Tbsp of Brown Sugar and salt and pepper to taste
7. Put back in oven and cook for about ten more minutes

This is great to serve with turkey. It kind of tastes like a cross between a sweet potato and a pumpkin. Some people like to serve it with Gruyere cheese or a cheese sauce. I don't really think that's necessary given the sweet/savory nature of the dish. However, it's all about what you like to eat. Obviously--the butter will not cut it if you have a Vegan in the family. If that is the case, then you can always substitute non-dairy based "Vegan Butter" or a much better idea is Olive Oil.
